Super Quick Quinoa Stir Fry

After an evening run back in the summer, I fancied something with a spicy kick to it for dinner, and because I’m trying to cut back on animal sources for the good of lives and the planet, I thought I’d go all out-vegan style for this creation.
Containing all nine essential amino acids, quinoa is one of only a few plant foods that is considered a complete protein and what better way to add it to your diet than through a hearty stir fry. Perfect if you’re short on the clock, this little concoction takes just 15 minutes to whip up and will keep you full for hours
In this recipe, I used a variety of veggies, including iron rich spinach, bamboo shoots, courgette and carrot, but you can use whatever you fancy to put your own personal twist on it, (and use up whatever’s in the fridge).
Ingredients
Sesame/stir fry oil
80g Merchant Gourmet Wholesome mixed grains
1 carrot, chopped
100g water chestnuts
50g bamboo shoots
½ medium courgette
Handful spinach
½ green pepper
¼ red chilli
1 Tsp light soy sauce
½ packet (max) chow mein stir fry sauce
½ small onion
Method
Peel and chop onions into thin, bite sized chunks, placing to one side.
Place 1tsp sesame/stir fry oil into a wok.
Add onions to pan, cooking until translucent
Then, add the rest of the vegetables, chow mein sauce and chilli cooking on high heat and stirring continuously until the vegetables have softened.
Add the ready to eat quinoa and mix in with the vegetables.
Serve and season with soy sauce as desired
