Clean McDonald's cheeseburger

Ingredients

  • 1 Wholemeal roll

  • 1 Beef burger patty

  • 1 thin slice reduced fat cheese

  • 1 small onion

  • ½ cup spinach

  • 5 cherry tomatoes, halved

  • ¼ medium cucumber, sliced

  • Handful grapes, halved

  • ½ tbsp. Apple cider vinegar

  • 1tbsp. ketchup

  • Frylight oil

Method

  1. Preheat the grill onto medium high.

  2. Peel and chop onions into thin, bite sized chunks, placing to one side.

  3. Lay spinach onto a serving plate.

  4. Chop the cherry tomatoes and grapes into halves and lay them out on top of the bed of spinach.

  5. Next, chop the cucumber into slices and then into quarter segments, adding to side salad.

  6. Drizzle the side salad with apple cider vinegar as desired, then place serving plate in fridge, allowing the salad to stay cool and fresh.

  7. Cook the patty for roughly 3-5 minutes on each side, adding the cheese slice on top once the patty has been turned over.

  8. Whilst waiting for patty to cook, spray a cooking pan 4-5 times with the Frylight oil spray, and place onto the hob on medium heat.

  9. Once the oil has begun to sizzle, add onions, cooking and stirring continually until they turn partly translucent .

  10. Reduce heat of hob.

  11. Take the serving plate from the fridge and cut the wholemeal roll into half.

  12. Turn off the grill and take out the burger placing into your roll, adding onions on top with a squeeze of tomato ketchup.

Chicken, feta and walnut salad

Think salads are dull, bland and boring? Think again. This was probably the most scrumptious salad I have ever made just on the basis that the combination of ingredients worked so well together. You’ve got the juice of the pears combined with the earthy, sharpness of walnuts, topped off with the salty, crumbly texture of feta, It surely was a match made in heaven.

I mean, who knew pears taste divine with spinach? Perhaps you do learn something new every day after all!

Ingredients

  • 1 cup spinach leaves.

  • 150g cooked chicken breast

  • 1 pear

  • ¼ zucchini, chopped

  • 15g walnut halves

  • 30g feta

  • ½ tbsp. balsamic vinegar

Method

  1. I pre-cooked the chicken breast a day in advance for ease, but it would typically take 30 minutes in a fan oven at 180°C. Just remember, if you are cooking the chicken first, to cover it with foil just to keep the moisture and prevent it from drying out in the oven.

  2. Chop courgette into small, bite-sized chunks, place to one side

  3. Bring 150ml water to the boil, and add the courgette, cooking until softened

  4. Once softened, drain using a sieve or colander. The last thing you’d want is a salad drowned in water!

  5. Chop pear into small, roughly 1cm diameter pieces.

  6. Add spinach, pear, walnuts, courgette and chicken breast into a small saucer

  7. Drizzle with balsamic vinegar.

  8. Cover the saucer, and shake until its contents are well combined.

  9. Serve on a cold plate and sprinkle with feta.

Super Quick Quinoa Stir Fry

Ingredients

  • Sesame/stir fry oil

  • 80g Merchant Gourmet Wholesome mixed grains

  • 1 carrot, chopped

  • 100g water chestnuts

  • 50g bamboo shoots

  • ½ medium courgette

  • Handful spinach

  • ½ green pepper  

  • ¼ red chilli

  • 1 Tsp light soy sauce

  • ½ packet (max) chow mein stir fry sauce

  • ½ small onion

  • ​

Method

  1. Peel and chop onions into thin, bite sized chunks, placing to one side.

  2. Place 1tsp sesame/stir fry oil into a wok.

  3. Add onions to pan, cooking until translucent

  4. Then, add the rest of the vegetables, chow mein sauce and chilli cooking on high heat and stirring continuously until the vegetables have softened.

  5. Add the ready to eat quinoa and mix in with the vegetables.

  6. Serve and season with soy sauce as desired
